1/2 cup red pepper, chopped
1/3 cup yellow pepper, chopped
1 tbsp. butter
1.5 cup long-grain white rice (I used Uncle Ben’s)
3 cups chicken broth
1/2 cup golden raisins
1/2 cup roasted macadamia nuts, coarsely chopped
1/4 tsp ground sage
salt to taste
1 cup fresh diced pineapple
1/4 cup parsley
Preheat oven to 375°. Melt butter in casserole dish; add rice, stirring to coat with butter. Add garlic, yellow and red peppers, and chicken broth. Bring to a boil. Add raisins, nuts, sage, and salt.
Place covered casserole dish in oven and bake for 18-20 minutes. Remove lid, add fresh pineapple and fresh parsley. Toss and serve.
