HAWAIIAN RICE PILAF

2-3 cloves garlic, minced
1/2 cup red pepper, chopped
1/3 cup yellow pepper, chopped
1 tbsp. butter
1.5 cup long-grain white rice (I used Uncle Ben’s)
3 cups chicken broth
1/2 cup golden raisins
1/2 cup roasted macadamia nuts, coarsely chopped
1/4 tsp ground sage
salt to taste
1 cup fresh diced pineapple
1/4 cup parsley

Preheat oven to 375°. Melt butter in casserole dish; add rice, stirring to coat with butter. Add garlic, yellow and red peppers, and chicken broth. Bring to a boil. Add raisins, nuts, sage, and salt.

Place covered casserole dish in oven and bake for 18-20 minutes. Remove lid, add fresh pineapple and fresh parsley. Toss and serve.

Making this to bring to Trevan, Amanda, and Charlie tomorrow. Just chopped everything except the pineapple and the garlic ahead of time. Cant' wait to see how it turns out 🙂
