FREEZER CHALLENGE

My friend, DeEtta, is hosting a Freezer Challenge on her blog. We have three freezers, so I’ll categorize this into three parts.
1. Upright freezer in garage:
BEFORE: You can see that the freezer isn’t really very dirty, but it is slightly disorganized – notice the frozen salad containers (cool whip containers), and it’s not very full.

AFTER: We now have 16 meals ready to go. Today we are baking zuccini bread and we hope to have enough loaves to fill up the spot to the left of the freezer salad containers. My mom is freezing some peaches which we can make into pies, cobbler, muffins, etc. at a later date. I’ll move the one casserole on the top down toward the bottom and put all of the peaches on the top shelf. I should have waited to take the “after picture” later today when we’re done, but I may not have time later (LOL) so I’ll just post how far we are right now.
Normally, I try to make 3-4 (or more) batches of each dinner that we make giving us a continual cycle of new freezer meals headed toward the freezer. However, this summer we’ve barely had time to cook anything at home let alone make anything extra. Actually, I should rephrase that because it really doesn’t take more than an extra 15-20 minutes to make 3-4 extra batches of most anything we’re making for dinner. What I should say is we haven’t had time to do anything more than heat up something from Costco or take n’ bake pizza, etc. Now that we’re starting school and co-op starts next week, I decided I better get some meals made ASAP! So, I’ve made a few doubles of things (like the Sweet and Sour Chicken mentioned in a previous entry) and I made a trip to the dinners-served place with some friends and family last week. Here are pictures from that night:

Amanda decided to come and help us after she got off from work.
I was SO GLAD she came to help since I wasn’t feeling very well that night.
She finished our meals and then helped a few of the other moms finish up their meals.
