Pineapple Casserole
2 T. Flour
1/2 C. Sugar
2 Eggs, beaten
1 (20 oz.) can crushed pineapple, drained
8 T. Butter or Margarine, melted
6 Bread Slices (white or whole wheat), cubed
Preheat oven to 325. In a mixing bowl, mix flour and sugar. Add beaten eggs, pineapple and butter, blend. In a lightly greased 9×9 inch oven proof baking dish, place the cubed bread in the bottom. Pour pineapple mixture over bread. Bake, uncovered, for 30 to 40 minutes. Serve warm. Yield: 8 to 10 servings.
