The best cornbread I’ve ever had was at a restaurant called Frontier Pie. Whenever we are passing through a town with one of these restaurants, we always have to stop! Tim’s mom found this recipe for cornbread a few years ago which tastes very similar to the one we love at Frontier Pie. We love to have our cornbread smoothered in honey. MANY THANKS to my IRL friend, Laura, for the jar of yummy honey you see in the above picture. Her family raises bees and their honey is the BEST!
CORNBREAD2/3 cup margarine
1 1/3 cups sugar
2 eggs (1/2 cup)
2 1/3 cups flour
1 cup cornmeal
8 tsp baking powder
1 1/3 tsp salt
2 cups milkCream margarine, sugar, and eggs. Mix dry ingredients. Alternate adding milk and dry ingredients to creamed mixture. Bake at 400 for 25 minutes.
