I'm not a tea drinker but this sounds lovely.
I spotted this recipe in a magazine this summer and was anxiously waiting to try it out on some friends who came for dinner last night! It was tasty, but I think I would have preferred these flavors hot instead of cold. I think I may leave out the cinnamon and add more of the orange-spice tea the next time I try it. Also, I didn’t freeze any of the juice. If you try this recipe, let me know what you think.
SPICED FRUIT TEA
5 cups boiling water
5 bags orange-flavored spiced herbal tea
1/3 cup sugar
1/4 t ground cinnamon
1 46-oz can unsweetened pineapple juice
2 cups cranberry juice cocktail
1/3 cup lime juice
assorted fresh fruit such as pineapple chunks or orange, lemon, or lime slicesPour boiling water into a 4-6 qt bowl. Add tea bags. Steep 5 minutes. Remove and discard tea bags. Stir in sugar and cinnamon until sugar is dissolved. Stir in pineapple juice, cranberry juice, and lime juice. Remove 3 cups of mixture. Cover and chill remainder at least 4 hours or up to 3 days.
Pour the remaining 3 cups into ice cube trays adding fruit, if desired. Cover and freeze until firm.
To serve, divide pour iced tea mix over frozen juice cubes. Add fruit and/or mint leaves to glasses.
