My friend, Kim, brought this YUMMY Carrot Cake for Easter Dinner. It was SO GOOD that I had to get the recipe so we could make it yesterday for a friend’s birthday! Thanks for sharing, Kim 🙂
Carrot CakeMix:
2 cups grated carrots
1/3 cup shortening
1 cup raisins (I omit these)
1 1/2 cup sugar
1 1/2 cup water
Bring to boil. Simmer 5 minutes. Let mixture cool.Mix:
2 cups sifted flour
1 1/2 teas. baking soda
1 teas. nutmeg
1 teas. cinnamon
1/2 teas. salt
1/2 teas cloves
1/2 teas. allspice
1 teas. vanilla extract
Add flour/spice mixture to carrots.Mix in to flour/carrot mixture:
2 eggs
1 cups chopped pecan or walnutsBake in 2 round pans at 300 for 20 mins or until toothpick comes out clean.
Icing:
1 stick butter
8 oz. cream cheese
2 1/2 cups powdered sugar
dash of vanillaBeat until creamy.
