BEAUTIFUL pie, wow! I get a total kick out of picturing you stopping to take pictures at every step! My dh is beginning to wonder why in the world he ever bought me a camera (much less a second one, haha).
Imake this pie for me! I LOVE the extra pecans which are added to the top which also add eye appeal. We heat this one up in the microwave and then top it with ice cream that melts over the top. It’s another recipe from the Harvest Time Pie cookbook by Pillsbury.
INGREDIENTS:1/3 cup firmly packed brown sugar
1 ½ tsp flour
1 ¼ cups light corn syrup (I prefer the thick)
3 eggs
1 ¼ tsp vanilla
2 TBSP butter, melted
1 cup pecan halves or broken pieces for filling
Unbroken pecan halves for top of pie
Heat oven to 375 degrees. In large bowl, combine brown sugar, flour, corn syrup, eggs and vanilla; beat well. Stir in butter and pecans. Pour into pie crust-lined pan. Arrange pecan halves on top of filling mixture. Bake at 375 for 40-50 minutes or until center of pie is puffed and golden brown. Cool. Serve plain or with whipped cream or ice cram.
