Both of those recipes sounds delicious! I love salsa and chips – it’s a real weakness with me. ha!
CHIPS & SALSA – DAY 138 of P365

One of my co-op friends, Joan, offered to make her homemade salsa which is the tomato and cilantro one you see in the foreground. Thanks much, Joan! We really appreciate your help.
Joan’s Salsa Recipe
2 cans (14.5 oz. size) petite diced tomatoes
1 bunch green onions, chopped (tops and all)
1 Tbl vinegar
1 Tbl lime juice
1-2 tsp. chopped garlic
1.5 Tbl finely chopped Jalapeño Peppers
1 bunch cilantro
The other salsa shown in the picture above is a corn and bean one that my mom makes. It’s also one of our favorites. Thanks for finding the recipe, mom.
CORN/BEAN SALSA
1 can of whole black beans, drained
1 cup of frozen corn
1 fresh tomato cut into small pieces
1/2 bunch of fresh cilantro, chopped coarsely
2 green onions, sliced
1/2 red pepper, cut into small cubes
1 small jar italian salad dressing or 1 batch of the following dressing:DRESSING:
2-3 tbsp olive oil
2 tbsp fresh lime juice
a dash of cayenne pepper
1 tbsp soy sauce
1/4 tsp ground cumin
2 tbsp crushed garlic
Normally, when we have salsa at home we make our own chips from tortilla wraps which we slice like a pizza and then deep fat fry each slice in a Fry Daddy. Sprinkle with salt. YUM YUM! Not this time (LOL). This time be bought them from….. you guessed it….. Costco.
