CHEESE TOPPED PORK CHOPS

Tonight we had Tim’s folks over for dinner and a game of Apples to Apples. Cheese-topped pork chops is one of our favorite dishes! The toppins is an egg/flour/parmesan cheese topping with parsley and onion that is SO YUMMY! You spoon it on top of browned pork chops and then bake until it raises and makes a light crusty topping. We also had salad, green beans, garlic bread, and pumpkin pie! Good thing I made it out for a walk today! Here is the recipe (I double the topping since we like it so much):
1 TBSP oil, 6 pork chops 1/3 cup flour
2 TBSP margarine, 1 egg beaten, 1/8 tsp pepper
2/3 cup milk, 3 tsp parsley, 1/2 cup grated Parmesan cheese
2 TBSP finely chopped onion (I’ve used yellow and red or dehydrated)
Heat oven to 350. Heat oil in large skillet, add porkchops and bron over medium high heat (I use a BBQer or George Foreman grill instead of frying). While porkchops are browning make the sauce:
Melt margarine in small saucepan over low heat; stir in flour. Gradually add milk. Cook until mixture thickens using a wire whisk to beat out the lumps. Mixture will thicken quickly and form into a dough type ball. Remove from heat. Stir in egg. Add remaining ingredients; blend well.
Arrange browned porkchops in an ungreased 9×13 baking dish. Spoon cheese mixture evenly over porkchops; cover. Bake for 30 minutes. Uncover; bake an additional 10-15 minutes until cheese topping is slightly brown and porkchops are heated through and tender.
