Here is one of the new recipes I’ve tried this summer. I’m sorry I don’t remember which magainze I found it in.
CAESAR POTATO SALAD
3 lbs small red potatoes, quartered
3/4 cup bottled Caesar salad dressing
2 T mayonnaise
2 T choped fresh parsley
1 T lemon juice
1 T grated lemon zest
1/2 t salt
1/4 t coarse-grind peeper
2 scallions, diagonally sliced
1/2 cup shredded Parmesan cheeseIn a pot, combine potatoes with enough water to cover. Bring to boil for 10-12 minutes until potatoes are tender. Drain. Rinse with cold water. Cool.
In a large bowl, combine dressing, mayo, parsley, lemon juice, zest, salt and pepper. Add potoates, scallions, and Parmesan. Toss to coat. Refrigerate before serving.
